Tulocay wines
are made to last a long
time, which is contrary to the prevailing "get it on the shelf and sell
it fast" style. Since our reds are unfined and unfiltered, they
frequently start throwing a sediment at a relatively young age.
Some folks
like to decant the wines
before serving them. If decanting is too much trouble, then pouring the
wine through a coffee filter — without coffee, of course — sometimes
works, although it doesn't remove the finest sediment and sometimes
mutes the flavors.
On the other
hand, many of our diehard
fans really like all the sediment to come through in the glass — kind
of like preferring crunchy peanut butter over the creamy style, as my
cousin Alphonse has noted. I can relate to that, being a nut fan
